Basil, Berry and Walnut
Oatmeal
A syrupy-sweet berry gastrique, fresh fruits and crunchy nuts will elevate your oatmeal to breakfast nirvana.

Makes 4 servings
For Berry Gastrique: | |

Unsalted butter | 1 teaspoon |
Shallot, peeled and minced | ¼ |
Fresh berries (strawberries, raspberries, blueberries) |
2 cups |
Sugar (depending on the sweetness of the berries) |
4-5 tablespoons |
White wine | 3 tablespoons |
White wine vinegar Pinch of salt |
2 teaspoons |
Cooking Method:
1.
Cook the shallots in butter over medium low heat until translucent, about 5 minutes.

Add remaining ingredients (berries, sugar, white wine, vinegar, and salt) and bring to a boil, then drop to a simmer and cook until fruit is very tender, about 15 minutes.

Puree mixture and pass through a fine mesh strainer to remove fine seeds.
4.
Taste to adjust seasoning and tartness, and then chill to hold.

Fresh berries for garnish | 1 cup |
Walnuts, chopped and toasted | ½ cup |
Fresh basil, chiffonade | |
Water | 1 ¾ cups |
Orange juice | 1/8 cup |
Sugar | 2 teaspoons |
Cooking Method:
1.
Cook oatmeal in the water, orange juice, and sugar.
2.
Serve each portion of oatmeal with a drizzle of the berry gastrique and garnish with the fresh fruit, walnuts, and basil.
