- Oven temperatures vary widely. To insure the correct temperature each time you bake, always use an oven thermometer. Biscuits, scones and shortcakes are done when they have risen high and are golden brown.
- Baking times may need to be adjusted when substituting pans. If the biscuits, scones or shortcakes have risen and are golden brown, they should be done.
- Insulated baking pans are made with two sheets of aluminum with an air pocket sealed between them. Try baking the biscuits, scones or shortcakes longer than called for in your recipe. Realize that most published recipes are not developed using insulated pans.
