Ingredients
- 3 cups Quaker® Life® Chocolate Cereal
- 2 tbsp chia seeds
- 1/3 cup almond butter (see note)
- 1 tbsp honey
- 2 tbsp water
- 1 tsp vanilla extract
- 2 tbsp sliced almonds, toasted if desired
Cooking Instructions
- Place cereal and chia seeds in large bowl; coarsely crush cereal.
- In small bowl, stir together almond butter, honey, water and vanilla until smooth.
- Add to cereal; stir with rubber spatula until well combined.
- Spray muffin pan cups with nonstick spray or line with cupcake liners.
- Press 2 tablespoons cereal mixture into each cup.
- Sprinkle with sliced almonds (about 1/2 teaspoon per bite), pressing gently into cereal mixture, if using.
- Refrigerate covered until firm.
- Store leftovers in refrigerator up to one week.
